The wine
His label presents the soil from which it comes, layers of limestone that alternate with clay, and in between, lapis specularis, or what is the same, crystallized plaster, typical of Alcarria. It is a very versatile wine, easy to drink for any occasion. The younger brother of the family, but with the mineral imprint of the rest of the Calzadilla family.

Tasting notes
Very vivid cherry red colour. Fruity notes of raspberry and cherry, touches of liquorice. Spicy background of nutmeg and clove, coffee with milk. Aromatic plants, rosemary. On the palate fresh, but with volume. Balanced.

Gastronomy
Ideal for cheeses, white meats, pasta, rice dishes and varied tapas.

The vineyard was founded on land never before cultivated, so it would have been a lack of respect to apply chemicals that could alter the composition of the soil and the final taste of our wines.

The isolation of Pago Calzadilla allows us to maintain our cultivation and pest control techniques, as we are far away from other farms that may alter or attract pests or abnormal diseases in our natural environment.

The wine
The flagship of Pago. A wine that we elaborate only the years that the plots Serrazuela and Bildorado give us grapes of extraordinary quality. Serene, lively, full of nuances. It is up to the best standards. A wine to be enjoyed every second from the moment the bottle is opened until it is finished.

Tasting notes
Medium-bodied cherry red with violet reflections. Complex nose, with red fruits in liquor, cherry, redcurrant, blueberry, coffee bean, dark chocolate, earthy notes. In mouth it has a very voluminous entry, with a firm but polished tannin, unctuous and elegant. Persistent, and a finish with a hint of spice and black fruit.

Gastronomy
Bull’s tail, stewed meats, rice soups, or with chocolate desserts.

The wine
Classic is the most personal wine of the winery, it is the core of our origins. It is the one that best represents the characteristics of the Pago soil, due to its powerful minerality. Tough, but at the same time very delicate and harmonious, a wine that leaves its mark.

Tasting notes
Ruby red colour. The nose, very intense, describes aromas of black berries, jam, touches of milk, vanilla, tobacco, all wrapped in a balsamic background. Mineral, aromatic plants, wet earth. On the palate, the unctuousness and the still lively, balanced tannin stand out. Long and expressive finish.

Gastronomy
It goes well with winter stews and any dish seasoned with mushrooms.

Controlled fermentation from the vineyard

We collect the grapes in 15 kg boxes to avoid damage due to the weight of heavier containers. We transport them directly to the winery next to the vineyard, and we keep the grapes in cold stores until they are treated. We pamper the grapes in each step up to the fermentation tanks, without applying mechanical pressure at any time, and doing the manual selection of the bunches. Quite a job so that the grapes begin to ferment in a controlled way.

ALLEGRO WINE

Calcareous with clay subsoil. Vineyards in the slopes of Cerro de la Pájara at 1000 m above sea level

The wine
Allegro is a wine as its name says: musical… a pleasure for our senses. A syrah that surprises with its freshness and joy. It has a lot of nerve, but we couldn’t expect less, since it was born at 1000 m altitude, in poor soil and with adverse climatic conditions.

Tasting notes
Bigarreau cherry red colour with violet tones, of medium intensity. Floral and ripe black fruit aromas, spices reminiscent of curry, bay leaf, black and white pepper, scrubland. Fresh in the mouth, generous in fruity and spicy memories. Silky, very long finish.

Gastronomy
Ideal for game meats, rice with meat, oriental food or very spicy dishes.

PAYSAN WINE

The wine
Joyful, the youngest of the family; not because it is less aged than the others, but because of its simple and casual style, and because it does not spend several years in the bottle racks like its predecessors. A sparkly garnacha to drink at any time.

Tasting notes
Medium cherry red colour. Nose showing ripe red fruit, redcurrant, cherry, aromatic silver, fennel, clove, graphite. Balsamic background. In mouth the entry is light, fresh, greedy. Again there is red fruit, jams. With little marked tannin and excellent acidity.

Gastronomy
Cow milk’s cheeses, white meats, eggs, sausages.

The wine
Matelot doesn’t complicate himself, nor does it complicate you. It just catches your attention to its exuberance.
It is pure fruit and earth. A very honest and original wine that accompanies us in the hottest days of the summer and in the aperitif occasion all year round.

Tasting notes
Pale straw yellow colour. In nose it emphasizes the tropical fruits, melon, green apple.
Cedar resin notes. A very elegant minerality is perceived.
In the mouth it is fleshy, round, subtly sweet, ample and very balanced. It has a final mild bitterness that confers personality.

Gastronomy
Fatty fish, sausages, cured cheeses and vegetable creams.
