D.O. Pago Calzadilla
Tempranillo 60%, Cabernet-Sauvignon 20%,
Syrah 10%, Garnacha 10%

Made from grapes from our plots Fogón, Aldehuela, Bildorado, Chocilla del Vinagre and Viña Olivos. Manually harvested in 15 kg boxes. Prefermentation cold macerations for 3-5 days and then transfer to small stainless steel tanks. All these varieties are vinified separately until the end of the “crianza” ageing stage. Malolactic fermentation and subsequent “crianza” ageing in 225 and 300 L French and American oak casks. Bottling with no physical or filtration stabilization.

Dark cherry colour. Predominant aromas of ripe cherry, gooseberry and light-flesh fruits like pears and loquats. Balsamic hints on the nose reminiscent of eucalyptus. Characteristic hints of tobacco, liquorice and vanilla. Fruity on the palate from start to finish. Well-rounded, balanced, with a good acidity that ensures it will evolve well over time. Long, expressive aftertaste.

Suitably accompanies blue fish (cod, tuna), cheese boards, white meats and stewed red meats.
