Syrah 100%

Made from grapes from plots on the slopes of the Cerro La Pájara. Manually harvested in 15 kg boxes. Prefermentation cold macerations for 3-5 days and then transfer to small stainless steel tanks. Malolactic fermentation and subsequent “crianza” ageing in 300 and 500 L French oak casks. Bottling with no physical or filtration stabilization.

Medium intensity dark cherry colour. Penetrating fruitiness (blackcurrant, raspberry, cherry) and floral reminiscences. Pepper, cinnamon and cocoa aromas. Full of subtlety. Unctuous sensation on the palate and fine mid-palate. Well-construed tannins, silky, fresh and with a delicious aftertaste.

Ideal for pasta, rice, and any dish flavoured with wild mushrooms.
